Avocado | The Mac & Cheese Phase
Avocado snuck its way into our usual mac & cheese routine today. Lately, it’s been nothing but Mac and cheese over here. Every. Single. Day. If you’re deep in the picky eater trenches too, you know how easy it is to cave to the only food they’ll say yes to. That’s where we’ve been with Ermias—Mac and cheese have been the only safe food he’s wanted for days now. But today, that changed.
An Avocado Experiment
I had a soft avocado just sitting there, and I figured… what if? So I made his usual ramen and stirred in a little peanut butter and soy sauce (two flavors he already loves), but this time, I mashed in half of that avocado too. I used a bit of the leftover noodle water to melt everything together and get the texture just right—creamy, flavorful, familiar, but secretly upgraded.

And Then… He Ate It
Y’all. He devoured it. Not one complaint. No suspicious looks. No pushing it away. Just full-on toddler slurping and eating like it was the best thing he’d had all week. I could’ve cried. This is a GAME changer. Healthy fats in? ✅ Picky eater tantrum avoided? ✅ One happy mama? Absolutely.
Why Avocado is a Big Deal
Getting Ermias to eat anything new lately has felt impossible. He’s stuck on what’s safe, and I get it. But today gave me hope. That avocado brought in nutrients he needs—especially those healthy fats that are so good for his growth and development—and he didn’t even blink. I didn’t have to hide it. I just made it make sense for him.
The Bigger Picture
Even though he ate the hidden avocado today, I still put a veggie and fruit on his plate like I always do. I know he’s not ready to eat them yet, but I want him to see them. Every meal, I try to offer at least one veggie, even when I know he’ll ignore it. Sometimes I’ll include a fruit too, but the veggie is non-negotiable—even if it just sits there.
It’s not about forcing. It’s about consistency and exposure. I can’t say how long it’ll take because, truthfully, I’m still in the thick of it myself. But I keep showing up. And that’s what matters.
